Craving butter chicken but need something quick and bite-sized? These juicy, spiced chicken bites are coated in a rich tomato-based butter sauce, delivering all the comforting flavors in just 20 minutes! Serve them as an appetizer with extra sauce for dipping, or enjoy them over rice or in a wrap.
Ingredients
– 1½ lbs boneless, skinless chicken thighs, cut into 1-inch pieces
– 2 tbsp neutral oil (canola or avocado)
– 1 tsp onion powder, divided
– 1 tsp salt, divided
– 2 tbsp no-salt-added tomato paste
– 1 tbsp water
– 1¼ tsp garam masala
– ½ tsp garlic powder
– ¼ tsp paprika
– ¼ tsp cayenne pepper (optional)
– ⅓ cup no-salt-added tomato sauce
– ¼ cup unsalted butter, cubed
– 1 tbsp finely chopped fresh cilantro
Instructions
1. First, preheat the oven to broil and line a baking sheet with foil.
2. Next, toss the chicken with oil, ½ tsp onion powder, and ½ tsp salt. Arrange in a single layer on the baking sheet and broil for 7 minutes until browned. Remove excess liquid.
3. After that, in a small saucepan, mix tomato paste and water over medium heat until smooth. Stir in garam masala, garlic powder, paprika, cayenne (if using), and the remaining onion powder and salt. Cook for 1 minute.
4. Then, stir in tomato sauce and reduce heat to low. Whisk in cubed butter, one piece at a time, until melted. Remove from heat.
5. Next, brush ¼ cup of butter sauce over the chicken and broil for another 3-6 minutes until sizzling and cooked through (165°F internal temp).
6. Finally, brush again with more butter sauce, sprinkle with cilantro, and serve with extra sauce on the side!
Notes
For a smokier flavor, add a pinch of smoked paprika or grill the chicken instead of broiling!
