Ingredients
– 3 tbsp butter (unsalted or salted)
– 1 medium yellow onion, chopped
– 3 large garlic cloves, minced
– ⅓ cup all-purpose flour
– 2 ½ lbs gold potatoes, peeled and diced
– 4 cups vegetable broth
– 2 cups milk
– ⅔ cup heavy cream
– 1 ½ tsp salt (adjust to taste)
– 1 tsp ground pepper
– ¼ tsp ancho chili powder (or regular chili powder)
– ⅔ cup sour cream
– ½ cup shredded cheddar cheese (for topping)
– ¼ cup chopped chives (for garnish)
– Crispy roasted mushrooms or smoked paprika (for a savory topping)
Instructions
1. First, melt butter in a large pot over medium heat. Add chopped onions and sauté until soft.
2. Next, stir in minced garlic and cook for 30 seconds. Sprinkle in the flour and stir until smooth.
3. After that, add diced potatoes, vegetable broth, milk, heavy cream, salt, pepper, and chili powder. Stir well and bring to a boil.
4. Once boiling, reduce heat and cook until potatoes are tender, about 10 minutes.
5. Next, remove half of the soup and blend until smooth using an immersion blender or regular blender. Return it to the pot.
6. Finally, stir in sour cream, mix well, and let it simmer for 15 minutes. Serve with cheddar cheese, chives, and crispy roasted mushrooms or smoked paprika for a smoky touch!
Notes
For extra richness, add a handful of shredded cheese while blending the soup! It makes it even creamier and more indulgent.
