Ingredients

– 16 oz lasagna noodles
– 10 oz frozen chopped spinach
– 3 cooked, boneless chicken breasts, diced
– 2 (16 oz) jars Alfredo sauce, divided
– 2 pints ricotta cheese
– 4 cups shredded mozzarella cheese
– Salt & black pepper to taste


Instructions

1. First, preheat the oven to 350°F (175°C). Cook lasagna noodles until al dente, then drain.
2. Next, cook spinach in ½ cup water over medium-high heat until tender, about 6-7 minutes. Drain well.
3. After that, mix the diced chicken with 1 jar of Alfredo sauce in a bowl. In another bowl, combine ricotta and spinach.
4. Then, layer the lasagna: Start with noodles in a greased 9×13-inch dish. Spread the chicken-Alfredo mixture, then 1 cup mozzarella. Add another noodle layer, then the ricotta-spinach mixture, followed by ½ jar of Alfredo sauce and 1 cup mozzarella.
5. Next, place the final noodle layer on top, pour the remaining Alfredo sauce, and sprinkle with 2 cups of mozzarella. Season with salt and pepper.
6. Finally, bake for 50-60 minutes or until golden and bubbly. Let it rest before slicing. Enjoy!

Notes

For extra creaminess, add a sprinkle of grated Parmesan on top before baking!
