Description
This Chicken Cutlet Sandwich is packed with crispy, golden-breaded chicken, garlicky sautéed broccolini, melty provolone, and sweet roasted bell peppers, all tucked into a soft, toasted ciabatta loaf. Every bite is a perfect balance of crunch, creaminess, and bold flavors!
Ingredients
– 4 cooked chicken cutlets
– 3 tbsp olive oil
– 2 bunches broccolini (or broccoli rabe)
– 2 finely minced garlic cloves
– 2 cups shredded provolone cheese
– 1 large ciabatta loaf (10-12 inches)
– ¼ cup pesto (optional)
– 2 tbsp balsamic reduction (optional)
– ½ roasted red bell pepper (sliced)
– Salt and pepper to taste
Instructions
1. First, prepare the roasted bell peppers and set them aside.
2. Next, heat oil in a pan over medium-high heat. Sauté the broccolini for 3-4 minutes until tender.
3. After that, stir in the garlic and cook for 30-45 seconds until fragrant. Remove from heat.
4. Then, place the chicken cutlets on a baking sheet, slightly overlapping, and sprinkle the cheese evenly on top.
5. Next, broil the chicken on high for 2-4 minutes until the cheese is melted and lightly browned.
6. Meanwhile, spread pesto on the bottom half of the ciabatta loaf.
7. After that, place the cheesy chicken on top, followed by the broccolini and roasted bell peppers.
8. Finally, drizzle with balsamic reduction (if using), place the top slice of bread, slice, and serve!
Notes
For extra crunch, lightly toast the ciabatta before assembling the sandwich!
