Description

Craving a sweet snack that’s actually good for you? These No-Bake Energy Balls taste just like cookie dough but are packed with protein, fiber, and healthy fats! Made with dates, oats, walnuts, and almond butter, they’re the perfect grab-and-go snack for busy days.


Ingredients

– 1½ cups oat flour
– 1 cup walnuts
– ⅓ cup creamy almond butter
– 10 soft Medjool dates (pitted)
– 1 tsp vanilla extract
– 2 tbsp water (plus more if needed)
– ½ tsp sea salt
– ½ cup mini chocolate chips


Instructions

1. First, add the oat flour, walnuts, almond butter, dates, vanilla, water, and salt to a food processor.
2. Next, pulse until the mixture sticks together when pinched. If it’s too dry, add water 1 teaspoon at a time.
3. After that, transfer the mixture to a bowl and fold in the chocolate chips.
4. Then, use a cookie scoop or spoon to portion the dough and roll into balls.
5. Finally, store in an airtight container in the fridge for up to a week or freeze for up to 3 months.

Notes

For a fun twist, swap the chocolate chips for dried cranberries or shredded coconut! You can also use peanut butter or cashew butter instead of almond butter for a different flavor.
