Ingredients
– 1 (14 oz) can beef broth
– 3 ½ lbs beef chuck roast, cut into 3 or 4 chunks
– 3 tbsp olive oil
– ½ (16 oz) jar pepperoncini peppers with juice
– 1 (1 oz) package ranch dressing mix
– 1 (1 oz) package dry onion soup mix
Instructions
1. First, set your Instant Pot to sauté mode and heat the olive oil. Sear the beef chunks for 2-3 minutes on each side until browned.
2. Next, pour in the beef broth, then sprinkle the ranch dressing mix and onion soup mix over the beef. Add the pepperoncini and juice.
3. After that, close the lid, set to high pressure, and cook for 110 minutes. Let the pressure release naturally for about 10-40 minutes.
4. Finally, shred the beef using two forks, mix it with the flavorful juices, and serve!
