Ingredients

– 1 lb. chicken breakfast sausage
– 1/2 sweet onion, chopped (optional)
– 1/3 cup all-purpose flour
– 3 1/2 cups whole milk
– 1/2 tsp. seasoned salt
– 1/2 tsp. ground black pepper (plus more to taste)
– 1 tsp. dried sage or thyme (optional)
– Salt, to taste
– Biscuits, for serving


Instructions

1. First, break the chicken sausage into small pieces and cook in a large skillet over medium heat. Add the chopped onion, if using, and cook until the sausage is browned and the onion softens, about 8–10 minutes.
2. Next, reduce the heat to medium-low and sprinkle the flour over the sausage. Stir well and let it cook for 2 minutes until the flour is lightly toasted.
3. After that, gradually pour in the milk while stirring. Increase the heat to medium-high, bringing the mixture to a gentle boil. Stir until thickened, then reduce the heat to medium-low.
4. Finally, add the seasoned salt, black pepper, and sage or thyme, if using. Simmer for 8–10 minutes, stirring occasionally, until the gravy reaches the desired consistency. Season with additional salt and pepper to taste. Serve hot over warm biscuits!

Notes

For an extra creamy texture, use a mix of whole milk and a splash of heavy cream. If the gravy thickens too much while sitting, just stir in a little more milk before serving!
