These light and refreshing Vietnamese Rice Paper Rolls are packed with fresh herbs, crunchy veggies, and protein, all wrapped in delicate rice paper! Serve them with a creamy peanut dipping sauce for the perfect balance of flavors. These rolls are fun to make and even more delicious to eat!
Ingredients
– 7–14 sheets rice paper
– 11 small cooked shrimp (or substitute with shredded chicken or tofu)
– 50g vermicelli noodles
– 7 soft lettuce leaves (butter or oak lettuce works best)
– 14 mint leaves
– 1 cup bean sprouts
Peanut Dipping Sauce:
– 1 tbsp peanut butter
– 2 tbsp hoisin sauce
– 1 ½ tbsp white vinegar or lime juice
– ⅓ cup milk or water
– 1 garlic clove, minced
– ½ tsp crushed chili (optional)
Instructions
1. First, prepare the peanut dipping sauce by mixing all ingredients in a bowl. Microwave for 30 seconds, stir until smooth, and let cool.
2. Next, soak the vermicelli noodles in warm water for 2 minutes, then drain. Peel and slice the shrimp in half.
3. After that, dip a rice paper sheet in warm water for 2 seconds, then place it on a clean surface.
4. Arrange three shrimp halves and a mint leaf near the top. In the center, place a lettuce leaf, vermicelli noodles, and bean sprouts.
5. Fold in the sides of the rice paper, then roll it up tightly from the bottom, enclosing the filling.
6. Finally, serve with peanut dipping sauce and enjoy these fresh, flavorful rolls!
Notes
For extra crunch, add julienned carrots, cucumbers, or avocado slices! If serving later, wrap each roll in plastic wrap to keep them fresh.
