Ingredients
For the Sweet Potato Mixture:
– 3 cups cooked & mashed sweet potatoes
– 1 cup white sugar
– ½ tsp salt
– 1 tsp vanilla extract
– 2 eggs, well beaten
– ½ cup butter, melted
For the Crust:
– 1 cup brown sugar
– ⅓ cup all-purpose flour
– 1 cup chopped pecans
– ⅓ cup butter, melted
Instructions
1. First, preheat the oven to 375°F and grease a medium casserole dish.
2. Next, make the crust by combining brown sugar, flour, pecans, and melted butter. Chill in the fridge until ready to use.
3. Then, in a large bowl, mix the mashed sweet potatoes with sugar, salt, vanilla, eggs, and melted butter. Beat for 3-4 minutes until fluffy.
4. After that, pour the mixture into the prepared dish and bake for 25 minutes.
5. If making ahead, refrigerate at this stage and reheat before continuing.
6. Finally, sprinkle the pecan topping evenly over the casserole and bake for another 10-20 minutes until golden brown. Let it sit for a few minutes before serving.
Notes
For an extra touch of warmth, add a pinch of cinnamon or nutmeg to the sweet potato mixture! It adds a cozy depth of flavor.
