Ingredients

– 1 tablespoon olive oil
– 2 cups chopped vegetables (e.g., red onion, bell pepper, mushrooms)
– 1 pound turkey sausage, casings removed
– 8 large eggs
– 2 pinches salt
– 2 teaspoons unsalted butter
– 8 burrito-size tortillas
– 2 cups shredded cheddar cheese


Instructions

1. First, heat olive oil in a skillet over medium heat. Add the chopped vegetables and sauté until softened, about 4 minutes. Transfer the veggies to a bowl and set aside.
2. Next, in the same skillet, add the turkey sausage. Cook, breaking it apart, until fully cooked. Transfer the sausage to the bowl with the vegetables.
3. After that, whisk the eggs with a pinch of salt. Wipe out the skillet, add butter, and melt over medium-low heat. Pour in the eggs and cook, stirring gently, until scrambled and just set.
